My story.
This is me Carmine de Cristofaro, born and raised in Castellammare di Stabia in the province of Naples.
Since I was a child I have always been attracted by meticulous work, the small details were the ones that caught my attention.
I grew up, and after school I decided to follow in my family's footsteps.
My grandmother started with a small shop in a neighborhood of our city, which my mother continued with passion.
Once school was over, we decided to broaden our horizons and opened a supermarket.
Years pass, needs change, and I decide to open my small shop in the city center.
A treasure chest of Italian and non-Italian niche products. It is here that I discover Spain, its traditions and its products.
I was struck by the art of cortadors. I started trying these techniques on my own, and the more I tried, the more I wanted to know more techniques and more information about this art.
And this is where my story as a cutter began. I received the "Lama master" recognition in 2020 from the Italian Charcuterie Guide. This increased my self-esteem and made me want to improve enough to reconfirm the title the following year.
After months, years of practice, I couldn't dedicate the time it required, and I decided to take this path as a lifestyle, and here I am introducing myself to the whole of Italy, and beyond, as a professional cutter.
